Vegan Hazelnut Cocoa Cookies
I was driving back from Wal-Mart after getting the final piece to my mother's gift and indulging in DVD discounts when I noticed the car in front of me swerve. I checked to see why so I could avoid any street pollution or living creature. YAY me because it was a huge female turtle heading to the middle of an expressway. I pulled over and put on my emergency lights and ran to it before it had time to run into oncoming traffic and put her in my car. Then I took this picture and set her free in a nearby canal. She was at least 16 inches long, dehydrated, and had cuts on her feet from travelling on land.
Then Manuella and I picked up Natalia to make these yummy cookies.
1/2 cup hazelnuts
1/2 cup white flour
1/2 cup whole-wheat flour
3/4 cup white sugar
1 teaspoon baking powder
1/8 teaspoon salt
1/4 cup unsweetened cocoa powder
1/4 cup vegan margarine or margarine
1/2 teaspoon vanilla extract
1/4 cup soy milk, plus
1 tablespoon soy milk
1 1/2 tablespoons ground flax seeds
4 1/2 tablespoons warm water
18 servings
35 minutes 15 mins prep
1. mix ground flax seeds with water and let stand until it gets thick (approx 3 minutes)
2. mix dry ingredients.
3. mix wet ingredients.
4. mix all ingredients together.
5. drop by tablespoon onto greased cookie sheet, 2 inches apart.
6. cook at approx 325-350 for 10-15 minutes (i bake in a toaster oven@ 300 for 10 min).

Please inform Natalia she is a hottie and needs to get in contact with me ASAP...even if its just to make some rude, completely obnoxious, completely wrong-for-the-moment, out-of-the-blue sarcastic comment about something taboo which will make me laugh...seriously she looks wonderful...too bad she is such a BITCH!
